Heirloom Tomato Salad with Burrata
This recipe features juicy, homegrown heirloom tomatoes paired with creamy burrata. The rich, indulgent burrata can be substituted with mozzarella for a lighter option. This simple, yet flavourful dish is perfect as a starter or side, highlighting the natural sweetness of the tomatoes and the creamy texture of the cheese.
Ingredients
- 3-4 homegrown heirloom organic tomatoes sliced
- 1 ball of burrata cheese
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar preferably aged
- A pinch of sea salt
- Fresh basil leaves torn or whole
Instructions
Prepare the tomatoes:
- Slice your heirloom organic tomatoes into thick rounds and arrange them in a circular pattern on a large serving plate. The heirloom tomatoes will be the base of your dish, showcasing their rich flavour and vibrant colours.
Place the burrata:
- Gently place the whole ball of burrata in the centre of the tomatoes. The creamy interior will ooze out when cut, adding a rich texture that complements the tomatoes.
Dress the salad:
- Drizzle the extra virgin olive oil and aged balsamic vinegar over the tomatoes and burrata, allowing the flavours to meld together. The olive oil brings richness, while the balsamic vinegar adds depth and a touch of sweetness.
Season:
- Sprinkle a pinch of sea salt over the tomatoes and burrata to enhance their natural flavours.
Garnish with basil:
- Tear fresh basil leaves and scatter them around the tomatoes and burrata, adding a burst of aromatic flavour and colour.
Serve immediately:
- Serve the salad as is, allowing guests to break into the burrata and enjoy the creamy interior alongside the juicy, flavoursome tomatoes.
Notes
Why Burrata in the Centre?
By leaving the burrata whole in the centre, it becomes the focal point of the dish, allowing the rich, creamy texture to be savoured with each bite of tomato. When you break into the burrata, its creamy interior will meld with the juicy tomatoes and balsamic dressing, creating a deliciously indulgent experience.
